Most people produce enzymes that can break down gluten proteins. However, people with gluten intolerance/celiac disease don't produce this enzyme. As a result, gluten proteins are not broken down, so they undergo horrible symptoms. I wanted to see if there is another group of enzymes that have the same ability to break down these gluten proteins. I've found that there are three enzymes that are able to do so: Papain, Bromelain, and Actinidin. The goal is to take these enzymes and use them to create a pill, the Glu-Relief Pill, to alleviate the symptoms of gluten intolerance/celiac disease.
